It was a time of celebration for us this past weekend! If you followed my Instagram stories on Saturday, you know that our little munchkin, Master IZ, graduated karate to achieve his green belt!

Like any 6-year old, of course, he wanted a sweet treat! Instead of grabbing something ready-made, we decided to make it a desilicious family affair. Little man joined me in the kitchen to pull off these decadent chocolate cupcakes with the most dreamy frozen strawberry buttercream frosting. Lets be honest; you really cant go wrong with chocolate and strawberries.

Plus, these chocolate cupcakes are the perfect pick if youve got Frozen-obsessed kiddos at home and on the hunt for something simple. Honestly, its a no-fuss recipe thats also versatile; you can change the toppers to suit your partys theme. Yup, Im already getting ideas for new years and kids birthday parties

How To Make Chocolate Cupcakes Step By Step

Before you start, make sure the butter and eggs are at room temperature. I remove these from the fridge about 2 hours beforehand. Preheat the oven at 400 degrees Fahrenheit, and gather all the ingredients.

  1. With the whisk attachment on your stand mixer (you can also use a hand mixer), combine the butter and sugar until creamy (Image 1).
  2. Follow with the eggs and vanilla extract and mix for a minute (Image 2).
  3. Add the flour, baking powder and cacao powder. I dont worry about sifting the flour or adding a bit at a time. It all goes in at once! (Image 3) Whisk for 2-3 minutes. Using a spatula, wipe down the sides and whisk again to ensure the mixture combines well.
  4. I use the double boiler technique to melt the chocolate chips (Image 4). Fill a saucepan with 2 inches of water. You can use an actual double boiler, or improvise with a saucepan and a heat-safe jug/bowl. If you are using a bowl, make sure that it fits comfortably over the saucepan. Bring the water to a boil over medium heat, then switch off the heat. Place the jug (with chocolate chips) in the saucepan and let the chocolate melt. Stir with a spoon. This should only take a couple of minutes to melt completely (Image 5).
  5. Pour the melted chocolate in the cake mix. Using your spatula mix to combine (Image 5).
  6. Line your baking tray with cupcake holders and fill them halfway with the chocolate cupcakes mixture. Then distribute 1/2 cup frozen strawberries (choose small ones cut in quarters) among the 12 cupcakes and pour the remaining cake mix on top (Image 6). Flatten with a spatula and send the chocolate cupcakes to bake for 20 minutes (middle shelf).
  7. Once baked, remove, and cool on a wire rack before frosting.

How To Make Strawberry Buttercream Step By Step

  1. Defrost 1/2 cup frozen strawberries in the microwave and blend into a puree (Image 1).
  2. Again, were using room temperature butter. You want to whisk the butter until it completely changes colour and transforms into a snowy white colour (Image 2).
  3. Now add the confectioners sugar (1/4 cup at a time) and combine using your mixer attachment. You will need to use your spatula and wipe down the sides and mix everything thoroughly (Image 3).
  4. Now its time to add the strawberry puree (Image 4). Dont worry if you notice it looks like yogurt curd as you mix. Just continue mixing on high/medium speed, and it will transform into the most beautiful pink and smooth buttercream (Image 5). I promise!
  5. Using a piping bag with a 1m nozzle (Image 6), frost your chocolate cupcakes (Image 7-8) and add the Frozen-theme toppers.

How Do You Add Flavour To Icing?

Whats great about this buttercream icing is that frozen strawberries add heaps of flavour. That means you dont have to worry about adding any extracts or jello its all wholesome frozen strawberry magic!

Not to mention, choosing frozen is a great way to enjoy delicious strawberry goodness all year long. I kid you not, our freezer always has a stash of frozen strawberries to incorporate into all sorts of recipe creations (sauces, smoothies, and to enjoy as is). In fact, theyre a regular snack option in Master IZs lunch box. Besides being tasty and healthy, theyre also convenient and affordable!

Top Tips For Making Chocolate Cupcakes With Strawberry Buttercream

  • Always use room temperature butter and eggs. This helps to create light-textured and fluffy chocolate cupcakes
  • Dont over-thaw the strawberries in the microwave. You dont want to lose that beautiful red colour or flavour. It makes all the difference!
  • Check the cupcakes after 15 minutes in the oven. Youll know theyre done when you poke a fork in the centre of the cupcake and it comes out clean. Leave them in for 3-5 more minutes, if the fork comes out sticky.
  • Make sure the mixer bowl is washed and completely dry before making the frosting. Any moisture will impact the consistency of the frosting.
  • Be patient when mixing the butter for the buttercream frosting. Do not add the confectioners sugar until the butter is white.
  • Make sure the chocolate cupcakes are completely cool before frosting.

Chocolate cupcakes

  • 1 cup butter (organic, room temperature)
  • 1/2 cup golden sugar
  • 2 eggs (organic, large, room temperature)
  • 1 tsp vanilla extract
  • 1 cup white flour
  • 2 tbsp cacao powder (unsweetened)
  • 2 tsp baking powder
  • 1/4 cup milk (2% fat)
  • 1/2 cup semisweet chocolate chips (melted)
  • 1/2 cup strawberries (frozen, small, cut in quarters)

Strawberry buttercream

  • 1 cup butter (organic, room temperature)
  • 1 cup confectioner's sugar
  • 1/2 cup strawberries (frozen, thawed and blended into a puree)
